Day 2: crockpot challenge

Wild boar are a huge problem here in California, so much so there is no limit to the amount of tags one hunter can obtain. These boar or rough, tough and mean as can be…. But man do they taste good. Keeping with the week of crockpot meals here is a simple, delicious carnitas recipe.

Crockpot carnitas tacos:

Ingredients;

Carnitas:

2-4 pounds of wild boar or pork shoulder, loins or rumps.
1/2 cup of favorite salsa
1/2 cup salsa verde
1/4 cup chopped garlic
1 tablespoon cumin
1/2 tablespoon cracked pepper
1 teaspoon salt
1 cup water
1/2 onion chopped
3 tablespoons vegetable oil
1 teaspoon oregano

Directions:

Add pork to crockpot,
Add and mix all ingredients into the crock pot.
Cover and cook on low for 7-8 hours.
Once pork has cooked for 7-8 hours use tongs or two forks and shred meat into the juice.
It’s that easy….!

Tacos:

Place two corn tortillas on plate add carnitas then top with your favorite toppings. Our family loves cilantro, red cabbage and salsa verde!!

Try mixing things up and making little corn quesadilla as your taco shell!!!

  1. I apologize for double commenting, but I couldn’t figure out how to send you a private message.

    My husband will be visiting a friend down south in a few weeks. They’re planning to hog hunt a bit, while they’re there. Would you mind sharing some tips/general areas? He’s an experienced hunter, (and veteran), and would be happy to return the favor if you’re ever up in the Napa area.

    If you’re not comfortable sharing, I totally understand. 🙂
