Ground Game Swiss Steak

Just got home from Wyoming with a freezer full of antelope, so lets take a look at the first meal I created from my Organic Meat. This dish will work with any wild game meat and is simple to recreate and delicious. You don’t have to be a gourmet chef to create restaurant quality meals at home. Ground Game Swiss Steak

From Field to Plate

Ingredients:

1 pound ground game meat

4 cloves garlic, minced

1.5 teaspoon kosher salt

1.5 teaspoon cracked pepper

¼ cup avocado or olive oil

1 large onion, thinly sliced

1 stalk celery, chopped

2 tablespoons tomato paste

1 (14.5 ounce) can or fire roasted tomatoes

1 teaspoon smoked paprika

2 tablespoons Worcestershire sauce

1 ½ cups of beef, vegetable or wild game broth

1 egg lightly beaten

Directions:

  1. In large bowl add ground meat, ½ teaspoon salt and pepper, 2 cloves garlic, 1 tablespoon Worcestershire sauce ¼ of onion and egg. Mix with hands and then form five 3 inch burger patties
  2. In large Dutch over of deep skillet heat oil over Med-high heat. Add each burger patty and brown for 3 mins each side. Remove from pan and set aside to rest
  3. In same pan add onions, garlic and celery sauté for 5 mins or until onions become translucent. Add broth, tomato paste, fire roasted tomatoes, Worcestershire sauce, smoked paprika, salt and pepper. Bring to a boil and reduce heat to med-low
  4. Add burger patties to mixture, spoon the mixture atop each patty. Cover pan and simmer for 20-30 mins on low
  5. Remove each patty from pan, top with a spoonful of mixture and a slice of Swiss cheese.
