Many hunters in the states are headed out in the deer fields in search of filling our freezers with fresh Venison. The difference with us in the southern states is those deer fields also hold another amazing meat that is invasive and delicious, wild pigs. I know for myself and others that even when you’re having a slow day in the field that when a pig walks buy, at least you’ll be bringing home the bacon.
With that being said let’s look at a simple recipe that can be used with some wild boar chops.
Many people ask me “Jeremiah, where do the chops come from?”
Chops come from the back strap or loin portion of the pig. People get confused with the loin and tenderloin. The tenderloin comes from under the rib cage whereas the loin comes from above the ribs. Tenderloins are smaller fillet style cuts of meat that are packed with incredible flavor, the loin is a larger cut of meat that still holds great flavor and when cooked right melts in your mouth.
One of my families favorite Chop recipes are my Grilled French Onion chops. So let’s look at this recipe shall we.
First I start out with my Homemade French Onion Soup mix, you can use store bought, but why would you when it’s so easy to make.
French Onion Soup Mix
1/3 cup dried onion flakes
2 tablespoon Beef bouillon
½ teaspoon onion powder
¼ teaspoon celery seed
1 tablespoon garlic powder
¼ teaspoon dried parsley
¼ teaspoon paprika
¼ teaspoon cracked pepper
- Mix all ingredients and store in air tight container.
Now let’s move to the meat
French Onion Chops
- Take four chops and season with French onion soup mix. Allow to rest for 30 minutes before grilling
- While chops are resting heat grill to medium- high heat. If using charcoal make sure you have a hot side and a cooler side.
- Place chops on grill and cook 5-6 minutes each side until internal temp reaches 145-160 degrees
- If your chops are starting to burn or char too much you can continue cooking on cooler side of grill until temp has been reach.
- Pull chops from grill and allow to rest for 5-10 minutes before you dive in and enjoy, this will help the meat retain its juices and keep it moist.
One killer side to serve alongside this amazing meal are grilled onion rings. Now I know what you’re thinking, grilled onion rings? Yes Grilled onion rings. They are super simple to make and can cook alongside the pork while grilling.
Grilled Onion Rings
2 large Onions. (red, white, brown or yellow, whichever you like)
2 tablespoons Paprika
1 tablespoon cracked pepper
1 teaspoon garlic powder
1 tablespoon olive oil
- Slice onions, keeping them whole sliced rings about ½ inch thick
- Coat each ring with olive oil and season with spices
- Place on grill and cook 4 minutes each side
- Remove from heat and place on each chop
You can use any cut of meat for this recipe from venison to pheasant breasts, just be creative.
