Lets start with the two basics any good home chef needs when creating incredible dishes, a good solid rub and sauce. The earthiness & richness that comes from coffee, really enhances the wild flavors found in game meat. Were as most seasonings and sauces battle the wild found in game, coffee helps develop depth and brings your meal to a whole new level. Lets get into it then, shall we?

Cowboy Coffee Rub 

Ingredients:

2 Tsp ground Coriander 

1 tsp mustard, dry 

1/2 Tbsp Cracked Pepper 

1/4 cup brown sugar, Dark 

1/2 Tbsp garlic, dried 

1/2 tsp Cayenne pepper 

1/2 cup Chili Powder 

1/4 cup smoked paprika 

2 tsp sea salt 

1/4 cup ground cumin 

1/4 cup ground coffee 

1/8 tsp cinnamon 

Directions: 

Mix all ingredients and store in airtight container. 

This rub pairs well with all red met wild game as well as turkey and ducks.

Espresso & Honey Bbq Sauce 

Ingredients:

1 Tbsp Avocado or Olive oil 

5 cloves garlic, minced 

1/2 cup espresso or dark coffee 

1/4 cup white wine vinegar 

1 1/2 cup ketchup 

3/4 cup honey 

1/4 cup hoisin 

1/4 cup soy sauce 

1 tsp cracked pepper 

1 tsp smoked paprika 

Directions:

1. In sauce pan over medium heat, heat oil. Add garlic and saute until soft, not burned. 
2. Add and whisk remaining ingredients and bring to boil, reduce and simmer for 30 minutes stirring often so not to burn. 
3. Remove from heat and allow to cool. 
4. BBQ sauce will keep in the fridge for a week.
