Honey BBQ Wild Game Sticks

Honey BBQ Jerky Sticks 

Ingredients: 

2 pounds wild game meat

3 Tbsp Granulated honey 

1 tsp sugar 

1 Tbsp Garlic powder 

1 tsp cracked pepper 

1 tsp smoked paprika 

1 Tbsp onion powder 

1/2 tsp celery salt 

1/2 tsp molasses

1/2 tbsp of liquid smoke if not using smoker to dry. 

3 tsp quick cure 

Directions: 

  1. Start out by grinding your meat through the largest grind plate you have I use a #32 plate
  2. Mix in all ingredients, once fully mixed place in ziploc bag and put in the fridge for 12-24 hours. This will allow all the flavors to meld and the meat firm up with the sugars and honey. 
  3. Preheat smoker or oven to 150-165 
  4. Using a jerky gun, or pipping bag (like you would use for cake decorating) make even lines on your grill grate
  5. Probe one stick for this will be your temp guide. 
  6. Smoke on low until it reaches 145 degrees. This should take 2-3 hours. Drop temp and smoke until meat reaches 155-165. Pull and let rest 10 minutes 
  7. Place in ziplock and place in fridge, this is a key step, it stops the cooking process. 
  8. After 1 hour in fridge eat and enjoy or seal for future hunt, trips or to hide from your kids.

Sticks will last 4-5 days out of fridge, 3 weeks in fridge and 6-8 months freezer.

    1. You can find quick cure, or pink cure on Amazon. It helps allow the meat to be safe to eat even when cooked at lower temps

  1. I was able to find granulated honey at a local supermarket. I plane to stuff into 21mm collagen casings and smoke. Will this work this way? Also, I was going to use Prague powder #1 instead of quick cure- will this work this way? thank in advance

    1. Yeah that will work awesome. Can’t wait to see how they turn out. I would do half the amount of cure using PP#1
