Pulled Pork, BBQ sauce and all the fixings rolled up egg roll style, what’s not to love?
BBQ Pulled Pork Grilled Egg rolls
Ingredients:
2 cups pulled pork (or any shredded meat)
3/4 cup bbq sauce
1/2 a cup cilantro, diced
2 cloves garlic, minced
1 cup roasted corn
1/2 cup shredded cheddar
1 cup red beans, rinsed
20 egg roll wrappers
1/2 cup water
Directions:
- In large glass bowl mix all ingredients minus the water and wrappers.
- Starting with 1 wrapper in a diamond position add 1-2 tbsp of filling.
- Fold the right and left corners towards the center
- From the bottom of the wrapper, fold towards the top, press down and pull back keeping everything tight.
- Roll the egg roll forward, when you have a small section of the top wrapper left, use your finger to wet the tip. Continue to roll and set aside. Repeat steps 2-5 until all rolls have been rolled.
- Heat your Traeger or grill to 350-400 degrees.
- Brush each roll with avocado or olive oil, place in heated grill, flip if needed. Cook until crispy and crunchy crust has formed on each egg roll.
- Serve with a side of bbq sauce and enjoy!
(recipe can be done in oven set to 375 or a hot pot of oil. )
We made these a couple weeks ago and really loved the sweet, tangy recipe where the corn and beans were an extra texture surprise. I posted a pic of it and you commented! It means a lot that FFTP noticed, liked and commented.
