Turkey Meatball Vegetable Soup

A simple, Easy and Delicious way to use your wild turkey.

Ingredients: 

Soup: 

3 tbsp oil 

1 brown onion, chopped 

2 celery stalks, chopped 

2 large carrots, chopped 

4 cloves garlic, minced 

1 cup corn 

1 cup green beans 

1 cup peas 

2 cans fire roasted tomatoes 

4 cups broth, chicken or turkey

2 cups V-8 juice 

2 tbsp cracked pepper 

Salt to taste

1 tbsp onion powder 

1 tsp paprika 

Meatballs: 

1 pound ground turkey, or other meat 

1 cup breadcrumbs 

3 cloves garlic minced, 

¼ onion, minced 

1 tsp salt and pepper 

1 tsp smoked paprika 

1 tsp onion powder

1 egg 

¼ cup milk 

Directions: 

  1. In large stock pot or Dutch oven add oil over med high heat, sauté onions, carrots, and celery until soft. Add garlic and cook 30 seconds more. 
  2. Add broth, V-8, veggies, tomatoes, and seasonings. Bring to a boil and reduce heat to a simmer. 
  3. In glass bowl add all meatball ingredients and mix to combine. form meatballs and drop into your soup. 
  4. Cook 1-2 hours until meatballs are fully cooked. Serve and enjoy.
