Dove Philly Cheese sandwiches

Dove Philly Cheese Steaks:

Ingredients:

10-15 dove breasts, sliced in half (save legs and thighs for stock)

1 large onion, thinly sliced

3 large bell peppers, thinly sliced

5 slices provolone cheese

5 hoagie rolls

2 tablespoons avocado or olive oil

2 tablespoons Worcestershire sauce

Salt and pepper to taste

1 tsp Garlic powder

1 tsp smoked paprika

Instructions:

Prep the Dove Breasts, Season the dove breasts with salt, pepper, and garlic powder. Set aside.

Cook the Vegetables, Heat 1 tablespoon of oil in a large skillet over medium heat.

Add the sliced onions and peppers to the skillet. Cook, stirring occasionally, until the vegetables are soft and slightly caramelized, about 10minutes.

Move the vegetables to the outer edge of the skillet, add dove to the center and let cook 1-2 minutes. Add the Worcestershire sauce to the skillet and toss the dove breasts and vegetables to coat them evenly.

Add remaining spices, Mix the dove and vegetables together Be careful not to overcook, as dove can become tough. Should only take another 1-2 minutes

Remove from heat and lay provolone over mixture, let sit for 1 minutes or until cheese melts.

Scoop meat, pepper and onions and the cheese onto toasted hoagie rolls and dig in!

Tips:

• Dove meat is lean, so be cautious not to overcook it to keep it tender. Dove can be served at 135° internal temp and still be safely consumed.

• You can substitute provolone with other cheeses like mozzarella, American or Wiz if preferred.
