Turkey season is in full swig in most states and starting up nation wide within the next few months. My friends over at Fit 2 Hunt, www.fit2huntperformance.com asked me to create a simple & healthy dish for them and those Fit 2 Hunt Turkey Hunters out there.
Turkey is one of the best wild game meats one can eat.
Here are some nutritional facts about wild turkey.
Wild turkey is very low in fat and cholesterol. Three and a half ounces of wild turkey meat contains:
Calories: 163
Protein: 26 grams
Fat: 1 gram
Cholesterol: 55 milligrams
25% of your daily allowance of Iron and 5% of your Riboflavin.
Taking a pound of wild ground turkey from last falls harvest, I made this simple yet flavorful soup.
Wild Ground Turkey & Tomato Vegetable Soup
1 pound ground wild Turkey
46 oz V8 low sodium vegetable juice
1 cup water
3 cloves Garlic minced
1/4 teaspoon cracked pepper
1/2 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried rosemary
1/2 cup diced carrots
1/2 cup corn
1/4 cup peas
1/2 cup green beans
16 oz Fire roasted tomatoes
16 oz Kidney Beans
In dutch oven over med-heat, add garlic and ground turkey, brown meat and season with pepper, thyme, basil and rosemary.
Once meat has brown add carrots, corn, pea, green beans, tomatoes and kidney beans.
add V8 and 1 cup water bring to a boil
reduce to med-low heat and simmer for 1 hour or until carrots are soft.
Serve and enjoy.
